Plum and Ginger Muffins

Ingredients

280g Plain Flour

3tsp Baking Powder

1tsp ground ginger

1/2 tsp salt

1 egg

240g Milk

90ml Mellow Yellow Oil

150g Plum Conserve

Method

Prepare muffin tins by greasing and flouring or use cases. Pre set oven to 190-200C.

In a large bowl sift together the flour, baking powder,ginger and salt.

In a separate bowl beat the egg, milk, oil and conserve

Pour all wet mix into the dry, stir just to combine.

Spoon into muffin cups. Makes 10-12 muffins. Bake for 20-25 mins
