Jersey Black Butter Light Fruit Cake
This is especially for Carole who we met at the Apple Day on Sunday in Stratford upon avon! Why not substitute The Black butter with Clippy's Figgy Diggy Jam
Pre heat your oven to 160 C , gas mark 3 Grease and Flour a 1lb Loaf tin
110g Softened Butter
100g Light Brown Soft Sugar
50g Dark Brown Soft Sugar
2 Large Eggs
250g SR Flour
1/2 jar Jersey Black Butter
50ml Milk
100g Sultanas
50g Dried Cranberries(optional)
Method-
Cream butter and sugars, add the eggs one at a time, then add the sieved flour. Fold in the Jersey black Butter, milk and soft fruit. Combine well. Transfer to the greased tin. Place on a baking sheet into the pre heated oven for 1 hour. check with a skewer to see if it comes out clean, if not keep checking it at 5minute intervals. Cool in tin then remove.
