Eton Mess with British Cassis

Ingredients

400ml Double Cream

4 crushed meringues

200g Strawberries

100g Raspberries steeped in Berries and Cherries Cordial

3tbsps British Cassis

Method

Whip the cream to soft peak, break up the meringue and mix into the cream with the strawberries

Place the raspberries in the bottom of the glass or dish, place the cream mix on top, drizzle with British Cassis. Finish with a sprig of mint
