Eton Mess with Blue Sweet Syrup

Ingredients

400ml Double Cream

4 crushed meringues

200g Strawberries

100g Raspberries steeped in Blue Sweet Syrup

Method

Whip the cream to soft peak, break up the meringue and mix into the cream with the strawberries

Place the raspberries in the bottom of the glass or dish, place the cream mix on top. Finish with a sprig of mint
